Cooking from the compost #3 Jalapeno Jelly

So, I had about a pound of Jalapenos brought home from work cause they weren’t top notch and I decided to make jalapeno jelly with some of them. It kills me that so much food gets thrown away. Cut the bad piece off and eat it, cook it, preserve it but don’t throw it away!

Yes they could look better. I trimmed them up and pureed them with apple cider vinegar, then put the mixture on the stove adding sugar and cooked it for 10 minutes at a boil.

Voila! Jalapeno Jelly! Cost? Just the pectin. It’s ok if your food doesn’t look perfect! Really, it is.

Cooking from the Compost #2

So I’ve started a series, “Cooking from the Compost” and this is the second post. I have been for years cooking with throw aways. A bad spot or not so pretty discarded produce is just as tasty and good. Just takes a bit more cutting.

Cooking from the Compost! It’s true.

So for years I have been a scavenger, scrounger penny pincher when it comes to food. So what it has a blemish. If I don’t have to pay full price, it’s cool with me! For years, i worked at an organic market, in the produce department, that holds high standards for the quality of their produce which means a lot gets thrown away! What a wasteful place America is. At least where I work they compost it. Meaning there are bins where they take the bagged rejects out to for people to use as compost. A perk for working in the department is first dibs on the rejects! Awesome!! Free organics?!? Um, YES!

Just loafing around!

I’ve been on a bread roll, lol so to speak, for a while now. I’ve discovered a great recipe from The Joy of Cooking for Steel Cut Oatmeal bread. It’s way yummy. For some reason I don’t have the patience to make the oatmeal but I have the patience to make the bread. Could be cause I just love bread and not some much oatmeal. Anywho, Here’s the recipe for those interested.

I made this recipe again but this time I added sunflower seeds. Oh man! So good!! I also whipped up a loaf of banana bread with bananas from the freezer. Good tip if you have too many bananas. Peel and freeze them for future baking extravaganzas.

While those were baking i raked the backyard to prepare for planting some peas and beets. Course we are supposed to get snow tonight so… we shall see.

Buns in the oven

So I was bust today in the kitchen. Just took out a batch of Squash rolls which are amazing! Man do I live these. So good.photo-4

While those were baking, I started another batch of hard cider. Also delicious! My brew corner is getting cramped! I hope all these wines I’ve got going turn out! The waiting is torture.

Well I got to go back down to the kitchen a make dinner! Sautéed chard, lacinato and mushrooms over rice. Chow!
